Celebrations and sweet treats are in order! I am so thankful for everyone’s love and support over this past year in my life, especially all the encouragement through my health difficulties and recently while my husband is deployed.

The past two years have been more than I had ever hoped or imagined.  In early spring of 2011, laying in a Washington D.C. hospital bed, suffering from type 1 diabetes, I never thought I would now be healthy and thriving (read more about my story here).  I graduated from two schools—Hillsdale College & French Language Institute—and completed my certification to become a Nutritional Therapy Practitioner.  I fell in love and married my amazing husband, Stephen, moved to Hawaii and was gifted an adorable puppy.  Every day I am amazed at God’s endless blessings.

My journey over the past few years has focused me with a passion for helping others with nutrition and cooking fresh, delicious foods.  Life is full of color and beauty, waiting to be explored and tasted.  It is my desire to encourage you to a healthy lifestyle so that you might live vivaciously.

Now that my schooling has come to a pause, I hope to use my nutrition certification to inspire you towards fun, nutritious eats and work with individuals to maintain healthy living.  Please explore this new website and know that lots of recipes are in the works!

My mom came to visit this past month and for my birthday we made coconut flour waffles, of course topped with whipped cream. For our wedding we received a waffle maker and since I was a child, waffles were always my favorite! I have been experimenting with grain free waffles and finally found a combination that works. I hope these birthday waffles fill your kitchen with cheer!

Birthday Waffles {grain free, gluten free, paleo}


  • 6 eggs
  • 1/2 cup coconut flour, sifted
  • 3/4 cup apple sauce
  • 4 tbsp melted butter or ghee
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp lemon juice
  • 1/2 tsp cinnamon


  • Preheat Round Waffle Maker to medium-low heat, you want the heat to be very low otherwise your waffles will be tough.
  • Separate the eggs, placing the egg yolks in one bowl and the whites in another bowl.
  • Using a hand mixer, whip egg whites until foamy, stiff peaks begin to form.
  • Melt butter in a small sauce pan.
  • Add coconut flour, apple sauce, melted butter, vanilla, baking soda, lemon juice, and cinnamon to the bowl with egg yolks. Blend until a smooth batter forms, scraping down the sides of the bowl and continuing to blend.
  • Gently fold in the egg whites to create a foamy batter but do not over stir and flatten egg whites.
  • Grease the waffle maker with coconut oil or olive oil.
  • Using a large spoon, scoop batter onto waffle maker so that bottom is covered but not overflowing. When waffles are fully cooked, gently remove with a fork and serve.
  • Serve hot topped with butter, pure maple syrup, raw honey, whipped cream or your favorite fruit.

Nutritional Information

Coconut flour is a nutritious flour high in protein and fiber and low in carbohydrates, providing a breakfast that will sustain your energy throughout the day.  As coconuts are naturally sweet, this grain and gluten free flour has a light sweetness to the taste.  These waffles will be dense, however the whipped egg whites and melted butter combination helps the waffles stay moist and fluffy.  Adding toppings such as berries, butter or yogurt makes the perfect breakfast!
