Carol Baker is an American food blogger and author, who has extensive research in the fields of both diet and exercise. She has written for numerous health websites over the years, but has found her home at Colorful Eats Nutrition.

As the main site runner and editor of Colorful Eats Nutrition, Carol writes the majority of the content, as well as puts together the research and plans for all projects undertaken by the site.

Carol Baker was educated at the University of Nebraska-Lincoln and studied nutrition in the Food Science and Technology department. From there she not only grew her love of food in terms of taste – but also on a technical and scientific level.

At the time she was writing for numerous food blogs just to share her expertise and insights, and mainly to vent her love of food. Little did she know back then, that this pastime would soon become integral to her career.

Career

After her time in college, Carol went into digital media and became a content writer for numerous health and nutrition sites on a freelancer level. This allowed her to build up her skills in both writing, and web development.

The types of articles, Carol would produce for these sites ranged from fun listicles (remember those?) that were often promoted on social media to high-level nutritional guides to certain foods and ingredients.

Carol thoroughly enjoyed the work, and occasionally still works with a handful of these websites. After a few years of working with these clients, Carol thought it would be best if she had her own website to work on whenever she had ideas that she thought was too good to share – and so CEN was born.

Her idea for the site initially came from friends and family who were passionate about food – but only in taste, not in nutritional value. Carol wanted to create a site that delivered both. Easy to make food guides that both taste great and are good for you. She has had her focus on the site ever since.

Food

Carol’s relationship with food wasn’t always as strong as it is now. When she was younger, she suffered from being overweight and having an unhealthy relationship with food. As she got older, she began to educate herself on healthier eating, macro-nutrients and caloric balances.

This allowed her to lose the weight in her teens, and also discover her love for exercise in her attempts to lose the weight. This started with less demanding endurance sports like powerlifting, and grew to more endurance based hobbies like bouldering and roller derby.

Exercise

As well as studying numerous types of exercise such as fasted-exercise, high intensity interval training (HIIT) and numerous others, Carol finds herself most at home with sports and hobbies such as roller derby, powerlifting and bouldering.

Having been on various roller derby teams, as well as recreational sessions of powerlifting and bouldering – she is all about building a strong body to complement some of the protein-dense meals she prepares in her off time.

She believes these sports combined are great for building both the lower and upper body, while maintaining a decent level of cardiovascular health and stamina. This allows her to have both a good level of strength and endurance year round.

Question: What inspired you to start your blog?

Answer: A lot of my friends and family are what they consider to be “foodies”. They LOVE food, but they wouldn’t say they “know” food. Food can taste good, but not necessarily be good for you – and vice-versa. I wanted to create a resource that allowed people to have both, a resource of good healthy food that tastes great and is nutritionally great too.

A happy, healthy resource for people to enjoy good food without the guilt of high calories, or out of proportion salt and sugars.

Question: What do you hope your readers get out of ColorfulEatsNutrition.com?

Answer: A food resource that can give them both healthy and delicious meals on a daily basis with little to no effort in the kitchen.

Question: What is food so important to your blog?

Answer: Food is all around us. We eat it every single day. Whether you like it or not – it’s a crucial and important part of your life. However, some people get into the mentality of food-as-fuel or just eating whatever they can out of convenience. It doesn’t have to be that way. I wanted to create resource where people could eat the food they love, while still having it give them what they need nutritionally, without too much effort. Easy, feel-good food that is both good for your body and your schedule.

Question: What do you think the most useful piece of content is on your site at the moment?

Answer: Currently, I would say my most useful piece of content is my article: “What are some good foods to eat during the COVID-19 pandemic?”. We’re living in some scary times, and to cope many of us turn to food – however, this may not always be the best idea. If you’re not eating the right thing, you may be making yourself vulnerable to the situation. I wanted to set out a brief, easy to follow guide that allows my readers to have one less thing to think about during this crisis.

Where do you see the blog in 5 years?

Answer: Hopefully still here, and bigger than ever! I’m always working on new content for the site, and am currently finding the time to manage this among my other projects. As long as it’s still out here and helping people I’ll be happy with it – regardless of how successful it is.
