There is something about Thai food that just satisfies any assortment of moods or appetites.  It's sweet or spicy, hot or cold, and always vibrant with colors and fresh flavors.  In college, my friends and I used to walk to the local coffee cup dinner where they served Thai food on Thursdays.  We went to college in the smallest town, so our weekly Thai lunches were always a treat!  Here in Hawaii, we can get great Thai food at our favorite little hole in the wall near the beach, a refreshing meal after an afternoon of swimming.  However, many Asian sauces or dishes are loaded with sugar or made with other ingredients that aren't the best for you, always making me feel a little sick afterwards.  Thai chicken basil is my absolute favorite, so I wanted to create a simple dish with just a handful of fresh ingredients for a savory and quick dinner.

At my weekly Saturday morning trip to the farmer’s market, I grabbed a huge bunch of fresh Thai basil.  I usually draw inspiration from the farmer's market as everything is so fresh and colorful!  The beautiful, bright green leaves and sturdy purple stems added some fragrant beauty to my market gatherings.  Thai basil is slightly sweeter than regular basil and adds a light aroma to your dish.  The contrast of sweet basil and bell peppers with the slight spice of chili flakes brings a fullness of flavors to suite any appetite. 

Serve this Thai chicken basil over zucchini noodles for a colorful, delicious dinner!

Thai Chicken Basil with Zucchini Noodles {grain free, gluten free}


  • 2 pounds chicken, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 3/4 cup fresh thai basil, thinly sliced
  • To garnish—3 green onions, sliced


  • 2 tbsp sesame oil
  • 4 tbsp soy sauce, or coconut aminos
  • 2 tsp fish sauce
  • 1/2 tsp chili flakes
  • 1/2 tsp ground ginger
  • 4 cloves garlic, crushed
  • fresh cracked black pepper

{2 tbsp coconut oil to sauté chicken}


  • In a medium mixing bowl, whisk together marinade ingredients (oil, spices, garlic) and add chicken.  Marinate chicken in sauce for 1 hour or up to 8 hours if possible.
  • In a large skillet or wok, heat coconut oil over medium-high heat.
  • Add chicken with sauce, browning all sides before lowering heat. Stir in red pepper and basil, continuing to sauté until chicken is completely cooked.
  • Serve with zucchini noodles and top with a sprinkle of green onions.
