I have been following Mickey Trescott’s work for quite some time now, so when a copy of her The Autoimmune Paleo Cookbook: An Allergen-free Approach to Managing Chronic Illness landed on my door step, I was more than excited! I squealed with excitement as I turned through the beautiful pages, my husband wondering what was so thrilling about a cookbook, and spent the entire next morning reading page by page!  Mickey’s book is not just a cookbook, but an inspiration, a storybook filled with passion and encouragement to those who suffer from autoimmune conditions or just feeling down in general.  I can’t say enough good things about this book, but I can say, do yourself a favor and purchase a copy for yourself or for someone you love who may be going through a difficult time with their health.  

Why I love Mikey’s Cookbook

  • It is helpful—Mickey has outlined 4 weeks of meal plans and complete shopping lists with ideas for each meal as well as cooking in bulk and using leftovers so that healthy eating can be simple and not require your whole day to prepare.  You will be able to walk into the store with this book in hand and purchase what you need for your weekly meals.
  • It is simple—the recipes are simple to follow, using ingredients that not only taste great, but also ingredients that are simple to find.  Her tips and recipe outline will help you cook nourishing foods simply in the comforts of your kitchen.
  • It is colorful—each page and recipe is complete with a beautiful colored photograph making the cooking process and your journey to health a fun filled adventure.

A little about the Autoimmune Paleo Protocol

The autoimmune protocol removes all grains, beans, legumes and dairy as well as eggs, nuts, seeds and nightshades. It emphasizes eating hight quality, nutrient-dense whole foods such as grass-fed meats, wild caught fish, fermented foods, healing bone broths, and colorful fresh foods.

This temporary way of eating works on healing the body and lessening symptoms.  In her book, Mickey so beautifully explains, “The main premise of the Autoimmune Protocol is that is its designed to help heal the gut from both intestinal permeability (“leaky gut”) as well as dysbiosis, both of which have been shown to be present in those with autoimmune disease.”  By removing these foods, the gut can then work on healing and restoring health to the body.

Three-Herb Beef Patties

A savory, herb breakfast or dinner sausage made using grass-fed beef.  Gourmet and delicious option for the autoimmune paleo healing diet.

Ingredients

  • 2 pounds grass-fed ground beef
  • 1 tbsp finely chopped fresh rosemary
  • 1 tbsp finely chopped fresh thyme
  • 1 tbsp finely chopped fresh sage
  • 1 tsp sea salt
  • 1 tbsp solid cooking fat (lard or butter)

Directions

  • In a large bowl, combine the ground beef, fresh herbs, and salt.
  • Using your hands, form into 12 patties.
  • Heat the cooking fat in a cast-iron skillet on medium heat.  Cook the patties for about 5 to 8 minutes per side, until nicely browned on the outside and cooked throughout.  (Alternatively, bake the patties in the oven for about 20 minutes at 400 degrees F).

 

Storage: Keeps in the refrigerator for several days. Also freezes well.

Variation: Make meatballs and serve with cooked spaghetti squash or zucchini noodles.
